Bible Note: Tim gave you a really great answer but let me add many of us have a misconception about wine, alcohol in particular and preservation of grape juice in Biblical times. Many say that since they didn’t have refrigeration they needed to make fermented wine to keep the grape juice. However alcohol made under non modern methods (non sterile conditions) has a spoilage rate almost equal to raw grape juice. To preserve their grape juice in Biblical times they used two different methods. One they produced a jelly like substance made from boiling the grape juice down. They kept this jelly in a wax sealed clay pots. When they wanted wine the merely dissolved some of the paste in water enough to suit their tastes and they had wine. The other method was to let the sun evaporate the liquid from the water then coating what remained with more grape juice and letting it evaporate. After a while they had something that was similar to what we call “fruit rollups”. They could store these almost indefinitely and any time they wanted wine they would simply tear off a piece dissolve it in water and they were ready to go. Source Full Life Study Bible Pub.
