Bible Question (short): Eating meat with blood in it: Gen. 9:4

Question (full): I have been searching at least 10 years for a serious answer to this question from Genesis 9:3,4: "Why do we Christians not take seriously the above passage in light of its' context but mostly seem able to accept vs.5,6 as applicable for today. In the age of mad cow disease and it's cause, should we not revisit the implications if God was serious about this as He gave us this meat to enjoy as food? I was told by Meat Inspection in the state I resided in at thet time that "Christians eat anything!" I was told that by law, the only ones who could specify how their meat was slaughtered were the Jews and the Muslims. Prior to the Age of refrigeration,I was told, animals were bled to prevent spoilage, but refrigeration removed that concern and "Animal Rights Groups" who saw the old way of slaughter as inhumane lobbied and won legislation to change the way meat was slaughtered. I love meat, but hate going to the meat counter because the meat is even packaged in its' blood! Thanks for your answer in advance.
