Another idea... Today's kosher laws are in many ways a compilation of years of tradition and added restrictions. After the Jewish exile from Israel in the 1st and 2nd centuries, many of them ended up in Spain and spread to northern Africa (now their descendents are called Sephardic Jews), and many spread to Europe (now their descendents are called Ashkenazi Jews). Because they lived under persecution for most of this existence, the rabbis wanted to distinguish the Jewish people from their gentile oppressors and pagans. Therefore, they made the laws more strict, with the Ashkenazi traditions being more strict because they faced greater persecution. They wanted to be set apart from this evil and did not want blend in with society or compromise their call to be a light unto the nations (seems we followers of Jesus Christ - Messiah Yeshua - today could learn from this quest for holiness and sanctification). Because of these added restrictions added in the Diaspora, the kosher laws (kashrut) of today are more strict than the kosher laws of Nehemiah's day (I don't know to what extent). Who knows, perhaps Nehemiah not only tasted the food but oversaw its preparation, etc. (slaughtering particularly)... in turn making the king eat only kosher food.
