Bible Answer: Greetings Mary.gunn! I think that Ex. 29:13 provides the answer to your question. It says: "Then take all the fat around the inner parts, the covering of the liver, and both kidneys with the fat on them, and burn them on the altar. 14 But burn the bull’s flesh and its hide and its offal outside the camp. It is a sin offering." The fatty part of the meat was specifically commanded to be burned as part of the sacrifice. The main reason for this was that the 'fat' was the choice part of the meat back then. Now days, we try to get as little fat as possible, but then, fat was the 'best' part. Therefore, the 'best' part was supposed to go to the Lord. However, Eli's sons would come and take the best parts for themselves. This was a sin against God. I hope this helps!
