Unleaven bread is a symbol for sin. 1 Corinthians 5:6-8, "Know ye not that a little leaven leaveneth the whole lump? Purge out therefore the old leaven, that ye may be a new lump, as ye are unleavened. For even Christ our passover is sacrificed for us: Therefore let us keep the feast, not with old leaven, neither with the leaven of malice and wickedness; but with the unleavened bread of sincerity and truth." Unleaven bread goes back to the first Passover meal (Exodus 12). The Hebrews were told to "eat it in haste" (the lamb, bread, and herbs). Naturally, it takes time for bread to rise with yeast (leaven) as an ingredient. The leaven symbolizes sin as a hinderance to being "passed over" from the judgment of God. They were to eat "with your loins girded, your shoes on your feet, and your staff in your hand" (verse 11). This signifies being prepared to move instantly on the word of God. WalkingTalkingBible |

In this sense, unleaven bread represents a pure, undefiled person or soul offered to God in worship. Just wanted to make sure I understand your overall statement.
