The shellfish passage is in the OT (?not sure where?), in the NT God tells Peter that 'what he has made clean we shouldn't call unclean' Acts 10. Jesus also said that it is not what enters a person's mouth that defiles them, but what comes out of it (gossip, envy, etc). When speaking of the word of God it is hard to seperate the written, inspired word from the word made flesh. However, words on paper do not give life - that is the job of Christ. Peter goes on to say that this word oc which he speaks is the 'good news that was announced to you' (v25). So, it doesn't really matter whether you capitalize it or not... the original authors wrote the whole book in capitals. What matters is how we understand what the word is.
