Yes it is valid today not the exact day but the deep meaning of how we keep the sabbath day. You quoted "Matthew 5:17-20 "Do not think that I came to destroy the Law or the Prophets. I did not come to destroy but to fulfill. For assuredly, I say to you, till heaven and earth pass away, one jot or one tittle will by no means pass from the law till all is fulfilled. I would like to ask you did Christ fulfill it like what israelites did? Under the law of moses you cannot go out in the day of sabbath, it is punisheable by death but Christ done many things on sabbath heal take corn and other things: Mr 2:23 And it came to pass, that he went through the corn fields on the sabbath day; and his disciples began, as they went, to pluck the ears of corn. But He said He never broke the law, He fulfill the sabbath day with a deep meaning by loving God with all thy heart, soul and strenght and loving His neighboors as thyself. By doing those two commandments, we done the 10 commandments with deep meaning, not just observing the law but doing it out of love. Christ fulfill it with a deep meaning He done works in the day of sabbath, it punisheable by death in the law of moses. Did Christ break the law no He is the Lord even of the sabbath: Mt 12:8 For the Son of man is Lord even of the sabbath day. It is Christ gave us the example how to observed it with the deep meaning, not because of fair that the elders will kill us by stone, but doing it as a son of God. Take a look as the writing of paul: Ac 13:39 And by him all that believe are justified from all things, from which ye could not be justified by the law of Moses. Do you think paul is against Mt 5:17 is he breaking the law by telling us that we are not justified by law? and sabbath day is included in the law. Aside from that we have to know for whom those laws are given: De 5:2 The LORD our God made a covenant with us in Horeb. De 5:3 The LORD made not this covenant with our fathers, but with us, even us, who are all of us here alive this day. in De 5:3 mentioned "LORD made not this covenant with our fathers, but with us, even us, who are all of us here alive this day" are you alive that time if that covenant is not made with thier fathers, how about for you?
