Hi, Jonathan... Welcome to the forum! I always find it curious that when people become interested in the question of canonicity, they always seem to start with non-canonical writings. I suppose that there is a kind of curiosity in all of us, in which we hope to be privy to something that most people do not know about. Nonetheless, Christianity is not concerned with learning that which has not yet be discovered, but rather that which God has revealed of Himself. Regardless, your question is a good one. The question of the canon, although a settled one, is an important one. In my own Historic Baptist traditions, the old divines start out with the following assertion: "The Holy Scripture is the only sufficient, certain and infallible rule of all saving knowledge, faith and obedience (2 Timothy 3:15-17; Isaiah 8:20; Luke 16:29, 31; Ephesians 2:20), although the light of nature and the works of creation and providence do so far manifest the goodness, wisdom and power of God, as to leave men inexcusable; yet are they not sufficient to give that knowledge of God and His will which is necessary unto salvation (Romans 1:19-21; 2:14-15; Psalm 19:1-3). Hi, Bro Nick... Welcome to the forum! A lay preacher would be someone who was not necessarily ordained by the church, nor one who would have ordinarily made his living from the pulpit. During the 17th century in England there were many people who were not legally allowed to be a preacher. At that time there were people called "Nonconformists" -- they were Christians, but were not Anglican. They could not become ministers because England did not recognize any group beyond the purview of the Church of England.
